Burrito Bowls From Leftover Braai

NEWEST columnist Robin Meyers shares his take on a burrito bowl incorporating leftover braai meat. Robin is an amateur cook who started experimenting in the kitchen while enlisted in the army because he was not always keen on what was being served. With his wife and son, both have dietary restrictions he has elevated his cooking style and shared his recipes and reviews on their family blog.

Burrito Bowls are a go-to for when we don’t know what to make.

Our obsession with bowls started after we had some at an NMB restaurant. However, I couldn’t justify spending that much for a meal that I could pull out of the kitchen without much prep.

The only thing I wasn’t too sure of was refried beans, but I thought I’d be literal and just re-fried the beans using a chipotle rub (I used the one from Simple Truth) and it’s become the staple.

Here is my basic burrito bowl recipe, you can edit it as you see fit.

  • A protein… (here I used leftover braai meat) but chicken is great and I used Haloumi when my wife tried to be a vegetarian for a bit
  • Refried beans…I just heat a tin of black beans with chipotle rub
  • Veg…we love adding corn(the corn in the picture was also braaied) but you can use any veg you prefer
  • Rice…long grain white rice, basmati rice, or brown rice work well. It’s a preference really
  • Salsa…I like fresh tomato and red onion but sometimes we get  salsas in jars from markets around Gqeberha
  • Avo and sour cream to top it off
