041FOOD columnist Shereez Hart shares a South African favourite, Lamington, an Australian cake made from squares of cake coated in an outer layer of chocolate sauce and coconut.

So I don’t like coconut but this is a recipe I absolutely *love* and that is only because_ my mom makes it. 😂 When I think of Lamingtons, I think of my mom’s amazing recipe and today I’ve chosen this as my recipe to share with you. I love changing recipes to mix and match things and to experiment but this one is all mom! Her recipe also happens to be pretty flop-proof… Enjoy!
LAMINGTONS
250g margarine (1 cup)
500 ml sugar (2 cups)
4 eggs
750 ml Cake Flour(3 cups)
15 ml baking powder (3 t)
250 ml milk (1 cup)
pinch salt
METHOD
1. Cream the margarine and sugar until light and fluffy. Beat in the eggs, one at a time.
2. Sift the flour, baking powder and salt together. Add to the creamed mixture alternately with the milk.
3. Bake in a well-greased oven grill pan at
180°C (350°F) for +/- 30 mins or until baked.
When cold, cut into squares.
Syrup for Lamingtons
3 cups water
1 cup Cocoa
1 and a half cups brown sugar
Boil for 10 minutes ..lastly stir in
1 tablespoon margarine
4. Sift sugar and cocoa into a saucepan.
Add the margarine/butter and stir over low heat.
5. Add water gradually and stir until the margarine/butter has melted and the syrup is smooth and thin enough for dipping.
6. Dip squares of cake in icing mixture and roll in coconut.
7. Place on a cooling rack and allow to dry.
TIP: Place a bowl of syrup over a saucepan of hot water to keep the icing thin.
