Road trips are all about freedom, fun, and a bit of adventure on the open road. And whatโs a great adventure without the perfect padkos to keep you fuelled? This year, Wayne Blake, Cluster General Manager at ANEW Hotels & Resorts, shares some fresh alternatives to keep your taste buds thrilled while on the move.


1. Sweet & Salty Coconut or Pineapple Chips
Crunchy, light, and oh-so-flavourful! These sweet and salty coconut or pineapple chips are the ultimate snack for mid-journey munchies, with a hint of cinnamon and a light sprinkle of sea salt.
How to make it:
- Toss thinly sliced coconut shavings or pineapple in olive oil, brown sugar, sea salt, and cinnamon.
- Air fry at 140ยฐC for 6โ8 minutes, stirring occasionally, until golden and crispy.
- Cool completely and pack into an airtight container.

2. Toasty Rice Salad
Got leftover rice before your holiday? Turn it into a crunchy salad thatโs perfect for the road.
How to make it:
- Spread leftover rice in a pan over medium heat, add olive oil, salt, and your favourite spices.
- Stir occasionally until golden and crispy.
- Cool completely and add to a salad for a deliciously crunchy road trip snack.
Pro tip: You can also bake the rice or use an air fryer to create crispy rice bars. Top them with avo and salmon for a more gourmet snack!
3. Sweet Chili Tofu Lettuce Wraps
Fresh, spicy, and vegetarian-friendly, these wraps are a light yet satisfying option for your next trip.
How to make it:
- Press and cube 1 block of firm tofu.
- Marinate tofu in soy sauce, sweet chili sauce, and sesame oil.
- Pan-fry until crispy (about 5โ7 minutes).
- Spoon onto butter lettuce leaves and top with cucumber, carrots, and fresh coriander.
- Roll up and secure with a toothpick.
Bonus: Pack ingredients separately in tiffin tins so the kids (and adults!) can build their own wraps at pitstops.

4. Spicy Mango Chicken (or Beef) Pockets
Forget the standard sandwich! These spicy pockets are juicy, fresh, and just the right amount of fiery.
How to make it:
- Grill or pan-fry chicken breast, lamb leg, or beef roast, then shred or slice thinly.
- Mix meat with mango cubes, lime juice, coriander, and a sprinkle of chili flakes.
- Stuff into mini pita pockets with crunchy lettuce or spinach.
- Add a drizzle of wasabi mayo for a little extra kick!

5. Zesty Energy Balls or Bars
Perfect for those long, open stretches when you need a serious energy boost.
How to make it:
- Mix 1 cup rolled oats, ยฝ cup desiccated coconut, ยผ cup honey, lemon zest, 1 cup raspberries or blueberries, and a pinch of salt.
- Blend into a doughy consistency.
- Roll into balls or press into a tray to cut into bars.
- Refrigerate for 30โ60 minutes to firm up.
- Store in an airtight container and grab as needed.
