This Human Rights Day, gather your family and friends for a meal that celebrates South Africa’s rich heritage. The team at Krazy Kiwi Kookbox have put together a simple Bobotie, a traditional Cape Malay dish, that is a flavourful and comforting classic made with spiced mince, topped with a golden, egg-based custard. Serve it with fragrant yellow rice and a spoonful of chutney for the ultimate local feast.
Easy Bobotie Recipe
Ingredients:
- 500g beef or lamb mince
- 1 slice white bread
- 1 cup milk
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp mild curry powder
- 1 tsp turmeric
- 1 tsp ground coriander
- ½ tsp ground cinnamon
- 2 tbsp fruit chutney
- 1 tbsp Worcestershire sauce
- 1 tbsp vinegar (white or apple cider)
- ½ cup raisins (optional)
- 1 egg
- Salt & pepper to taste
- 2 eggs (for topping)
Method:
- Preheat the oven to 180°C. Soak the bread in the milk, then squeeze out excess milk and mash the bread. Keep the remaining milk for the topping.
- Sauté the onions in a pan until soft, then add garlic, curry powder, turmeric, coriander, and cinnamon. Fry for a minute until fragrant.
- Add the mince and brown it, then mix in the soaked bread, chutney, Worcestershire sauce, vinegar, and raisins. Season with salt and pepper.
- Transfer the mixture to a greased baking dish and smooth the top.
- For the topping, whisk the two eggs with the reserved milk and a pinch of salt. Pour over the mince mixture.
- Bake for 30-35 minutes until the custard is set and golden brown.
Serve with: Yellow rice, sambals, and extra chutney.
