Butter Chicken is a cross-continental dish originally from India, but a firm favourite with South Africans. Shereez shares her family’s recipe

Ingredients:
- 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 1 – 2 chilli’s(Pending on your heat levels, slice if you’d like added heat, de-seed if you’d just like the flavour)
- 6 – 8 curry leaves(1 sprig)
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 tablespoons curry powder(Kashmiri special)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander powder
- 1 can (400 g) diced tomatoes or 2 grated tomatoes
- 1 can (400 ml) coconut cream
- Salt, to taste
- 2 tablespoons vegetable oil
- Chopped fresh coriander (optional)
Instructions:
- In a large saucepan or pot, heat the oil over medium-high heat.
- Add the onion to the pan and cook until softened, about 5 minutes, add sliced chillies and curry leaves. Then add the garlic and ginger, and cook for 1-2 minutes until fragrant.
- Add the curry powder, cumin and coriander powder to the pan and stir to combine with the onion mixture. Cook for 1-2 minutes until the spices are fragrant.
- Add the diced tomatoes, allow to cook for 5 min adding splashes of water if needed then add the chicken and cook until covered in the mixture, about 5-7 minutes. Add the coconut cream to the pan and stir to combine. Bring to a simmer and cook for 8-10 minutes until the sauce has thickened slightly.
- Cook for an additional 10-15 minutes on low, stirring occasionally, until the chicken is cooked through and the sauce has thickened to your desired consistency.
- Season with salt to taste approx. 1 and half tsp. Serve over basmati rice, garnished with chopped coriander. Enjoy your delicious Butter chicken!
