Recipe: One Pot Baked Chicken With Garlic and Rosemary

You have guests, no time and still would like to impress. This Chicken Dish will have you tapping your own back for a job well done, while still giving you time to lay the table, freshen up and serve your meal without a single droplet of sweat! It’s a one-pot stop and takes roughly an hour from preparation to the table.

BAKED CHICKEN WITH GARLIC AND ROSEMARY (Serves 4)

8 chicken portions roughly the size of your hand

2 cups of olive oil

The Juice of 1 lemon

1 heaped tsp chicken stock powder

1 heaped tsp of chicken spice

salt and milled pepper to taste

1 lemon, thickly sliced

10 cloves garlic, unpeeled

4 sprigs of fresh rosemary

Wash and wipe chicken with a damp cloth and place in casserole dish.

Mix oil, lemon juice, stock powder and seasoning together and drizzle over chicken.

Add lemon slices, garlic cloves and rosemary.

Roast in a preheated 200°C oven for about 35 minutes. You will need to shake the

pan from time to time during the cooking process to prevent sticking.

Take out of the oven, garnish with fresh Rosemary, and lemon wedges and serve with sides of your choice, eg. veggies, yellow rice(it’s just fun when it’s coloured), Rocket, feta and beetroot salad.
