Amarula, a creamy liqueur made from the indigenous marula fruit, and malva pudding, a classic South African dessert, both hold deep cultural significance, celebrating the flavors and heritage of the country.
Ingredients:
For the pudding:
- 1 cup flour
- 1 cup sugar
- 2 tbsp butter, melted
- 2 eggs
- 1/2 cup milk
- 1 tbsp apricot jam
- 1 tsp vinegar
- 1 tsp baking soda
For the sauce:
- 1/2 cup Amarula cream liqueur
- 1/2 cup cream
- 1/2 cup sugar
- 2 tbsp butter
For the braai roasted fruits:
- Pineapple slices
- Peaches, halved
- Plums, halved
Instructions:
- Prepare the malva pudding:
- Preheat your oven to 180°C.
- In a bowl, mix the flour, sugar, and melted butter.
- Add the eggs, milk, apricot jam, vinegar, and baking soda, and stir until well combined.
- Pour the batter into a greased baking dish and bake for 30-40 minutes or until golden and cooked through.
- Make the Amarula sauce:
- In a saucepan, heat the cream, sugar, butter, and Amarula cream liqueur over medium heat.
- Stir until the sugar dissolves and the sauce is smooth.
- Braai the fruits:
- Grill the pineapple, peaches, and plums over the braai until caramelized and slightly charred.
- Serve:
- Serve the warm malva pudding with a generous drizzle of Amarula sauce and top with the braai roasted fruits.
